The egg has become one of the favorite foods of the French. But is he a victim of his success? Rich in protein and inexpensive, producers are now struggling to meet demand.
The egg has become an essential food for the French. A mother of four interrogated children admits consuming more and more: “It depends if I have cakes to make or if there are special events. But I buy about twenty a week.” To the question why more eggs, she answers: “Because we reduce the consumption of animal proteins and because meat costs more too.” The French consume on average six eggs per week and per person. Result: the shelves are regularly sparse in certain supermarkets. No shortage, but some tensions on the market.
With sales up 4.2 % over a year, the production sector cannot follow the cadence. To meet the rising demand, it would take 300 more chicken coops, or a million additional pools within five years.
