Chef François Lessard and his wife, and partner, Laura receive their guests at home, in their magnificent house in Eastman. We sit down there to taste a menu of a few services where time seems suspended.

Eight5quatre (in reference to the address of the place) is the couple’s carefully thought out of the couple. Chef François Lessard has accumulated around thirty years of catering experience in Western Canada. Desiring to have a better life balance, but also access to regional producers and land to grow vegetables and flowers themselves, the partners set their sights on a landing for Eastman. They built their house, of Scandinavian style, having in mind the project to be hosts for a few evenings per week.

The gastronomic experience of this hidden table is deployed on Fridays and Saturday evenings. We are warmly welcomed by François and Laura, from Costa Rica, who take the time to chat with each client. The menu is only revealed when we sit at the table. We can nevertheless expect a concern for freshness-which the chef has brought back from the West-and hyper-local ingredients (cheese from the new France cheese dairy, tomatoes from a neighboring producer, garden flowers).
When passing The pressthe chicken agnolottis bathed in a rich tomaté sauce which gave the impression of chewing directly in tomatoes in the garden. The asparagus soup and the Sockeye salmon ceviche called beautiful days. The portions are generous, and the experience is intimate and charming, with the chef who activates in the kitchen and Laura who walks from table to table. The private import wine card has been carefully mounted, with the help of a sommelier, to agree with the seasonal menu, and a pretty blackcurrant mocktail is also offered.
Some projects will brighten up the coming months of eight5quatre. The couple offer a formula to take away, the Graze boxes, which contain cheeses, cold meats, marinades and tartinades, perfect for a picnic or an aperitif at the chalet. A few Sundays in summer will also be dedicated to a “SIP & SNIP” where bites and drinks will be served in the Dahlias de Laura garden. Summer promises to be exquisite in François and Laura, whose art of living even illuminates rainy evenings.
